Lately I've been crazy into baking and I wanted to know if anyone had any suggestions on good breads to bake. So far I've made onion bread (mmm), french bread (a little on the tough-as in texture-side), and banana bread (with sour cream). They've each turned out looking great but the French bread was a bit tougher on the inside. What effect does kneading too long have on the texture of bread? And if you don't have a kitchenaide mixer with a bread hook, how do you mix it all together? There was a near distaster involving a hand mixer and bread dough. If anyone has any delicious recipes to share or advice on kneading, rolling out, and baking bread in general I'd be more than happy to hear from you!
If it includes yeast, I fail! But, that hasn't stopped me from purchasing a bread maker and kitchen aid mixer (w bread dough hook) so, feel free to come borrow either!
